Turn a repeated waste event into a visible monthly and annual cost.

Recorded waste should retain the product, quantity, reason, location and cost basis so management can investigate the cause.

Reviewed: 5 September 2026

Per event€34.00
Per week€102.00
Per month€442.00
Per year€5,304.00

The monthly estimate uses 52 weeks ÷ 12 months.

01

Choose a quantity and cost that use the same unit

Enter the amount discarded in one event. If you weigh waste in kilograms, use the cost per kilogram; if you count portions, use the ingredient cost per portion. For mixed products, calculate each separately and add their costs. A menu selling price measures a different thing from ingredient cost.

  • ✓ Quantity per event: the amount discarded each time, not the weekly total.
  • ✓ Cost per unit: the recorded purchase or recipe cost for that same unit.
  • ✓ Events per week: how often this particular waste event occurs.
02

Worked example: a repeated preparation loss

Illustrative example: 4 kg of prepared ingredients costing €8.50 per kg are discarded three times a week. The calculation is 4 × €8.50 = €34 per event, then €34 × 3 = €102 per week. These are example figures, not results reported by a RestoVector customer.

  • ✓ Average month: €102 × 52 ÷ 12 = €442.
  • ✓ Full year at the same rate: €102 × 52 = €5,304.
  • ✓ At two events per week instead of three: €68 per week, a €34 weekly reduction.
03

Read the projection as a scenario

Monthly and annual figures assume the same frequency for 52 weeks. Seasonal demand, holidays and changing preparation volumes can make actual totals different. The estimate covers only the cost entered; it does not automatically include staff time, disposal charges or lost sales. A projected reduction becomes a saving only when the relevant costs actually fall.

04

Find the waste you can prevent

Record the product, quantity and reason for each event over a representative week. Separate spoilage, preparation losses, overproduction and customer returns. Review the most costly repeated cause, try a specific change and compare a similar period. When sales volumes differ, compare waste per cover as well as the total.

Record the baseline with the restaurant waste log

05

Check whether waste is already included in food cost

Discarded food can already be part of the cost calculated from opening stock, purchases and closing stock. Use the waste figure to explain that cost; adding it again would double-count the same ingredients.

Clear, verifiable answers

Can I use kilograms, litres or portions?

Yes. Keep quantity and unit cost on the same basis. For 4 kg, enter the cost per kg, not the price of a whole supplier pack. For portions, use recipe cost per portion.

Why does the monthly estimate use more than four weeks?

It spreads 52 weeks across 12 months, giving about 4.33 weeks per month. It is an average projection, not a total for a particular calendar month.

Is the annual figure a guaranteed saving?

No. It is the projected cost of the entered waste pattern. Savings depend on what you can prevent and whether purchasing or other costs actually decrease.
