Restaurant group control
Compare locations fairly before asking one team to copy another.
A useful group view combines consistent definitions with the local context behind each location: volume, opening hours, menu, prices, staffing and data completeness.
A ranking without coverage and context can punish the location with better recording or a different operating model. Comparison should lead to questions, not automatic blame.
Standardize definitions
Align net revenue, covers, food cost, labour cost, waste reasons, stock units and service timestamps. Preserve local tax and accounting differences where required.
Normalize the comparison
Use per-cover, per-revenue, per-labour-hour and like-for-like period measures alongside totals. Show recipe, sales, labour and count coverage for every location.
Find transferable practices
Investigate why a location performs differently before copying the result. Supplier terms, menu mix, batch size, shift deployment and local demand may explain the gap.
- ✓ Food cost and variance
- ✓ Waste by reason
- ✓ Sales per labour hour
- ✓ Stock variance
- ✓ Kitchen and table time
Keep local ownership
Group leaders set definitions and review material exceptions; local managers own the records and actions. Each decision should retain its location, period, evidence and follow-up date.
